Sweet Potato Pie Recipe

Pan size: 9 inch pie plate
Crust - Temp: 450°F degrees
Crust baking time: 8 to 10 minutes
Sweet Potato Pie - Temp: 350 °F degrees
Sweet Potato Pie baking time: 55 to 60 minutes
Servings: 8

Sweet Potato Pie Baking Directions

A sweet potato pie, made with a crunchy oat and pecan crust.

Crunchy Oat and Pecan Crust

1 1/4 cups quick cooking oats
1/4 cup whole wheat flour
1/3 cup ground pecans
3 tablespoons light brown sugar
1/4 teaspoon salt
3 tablespoons olive oil

Sweet Potato Pie Filling

1/4 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
3 eggs, beaten
2 teaspoons vanilla
1 1/2 cups cooked, mashed sweet potatoes
1/2 cup apple sauce
2/3 cup evaporated milk

Preheat oven. In a mixing bowl combine oats, flour, pecans, sugar, and salt together in small mixing bowl. Add olive oil to dry ingredients and mix well. If necessary, add a little more oil to hold mixture together. Press pecan crust into a 9-inch pie plate and bake for 8 to 10 minutes or until crust is lightly browned.

Reduce oven temperature to 350°. In the same mixing bowl, combine sugar, cinnamon, nutmeg and salt together. Add eggs and vanilla, mix until ingredients are well blended. Stir in mashed sweet potato, apple sauce and milk.

Pour sweet potato pie filling into baked pie crust. Bake 55 to 60 minutes or until a toothpick inserted near the center comes out clean.
