Waldorf Salad Wrap Recipe

Bowl size: medium bowl
Servings: 3
Can be doubled for a crowd


4 tablespoons light mayonnaise or olive oil mayonnaise
2 1/2 tablespoon Dijon mustard
2 tablespoons white wine vinegar
Salt and ground black pepper
1/3 cup extra virgin olive oil
3 cups shredded rotisserie cooked chicken
1 large apple cored and cut into small chunks
1/4 cup crumbled blue cheese
1/4 cup dried cherries, cranberries or raisins
1/4 cup chopped toasted walnuts or pecans
arugula - optional
3 large whole wheat wraps- heated lightly in a skillet

Waldorf Salad Wrap Directions

In a medium bowl, whisk together the mayonnaise, mustard, vinegar, salt and pepper. Slowly whisk in the olive oil until well blended. Season with salt and pepper to taste.

Combine the cooked chicken, apple, cranberries, cherries or raisins, blue cheese and walnuts or pecans in a medium bowl, add a few tablespoons of the dressing, season with salt and pepper, toss to combine.

Spread the dressing down the center of each whole wheat wrap then top with some arugula. Divide the chicken mixture between the three wraps. Roll each waldorf salad wrap tightly, then slice in wrap in half. Secure each half with a toothpick.

**Arugula is a Mediterranean plant of the mustard family, having pungent leaves used especially in salads and sandwiches, also called rocket.**
