Farmhouse Apple Cake Directions

Cake pan size: 8 inch round springform cake pan
Temp: 375°F degrees
Apple Cake baking time: 55 to 65 minutes

Thin apple slices and fresh cranberry's are bound by a light custard that gets caramelized for a great topping.

5 large apples
2/3 cup fresh cranberry's
1/2 cup milk
7 tablespoons butter
1 tablespoon shorting or cooking spray for pan
2 large eggs
1 1/4 cups sugar
1/2 cup flour
1 tablespoon vanilla extract
2 teaspoons baking powder

Preheat your oven. Prepare the spring form cake pan sides and bottom with shorting or cooking spray. Measure milk into a glass measuring cup. Cut butter in pieces, add to the milk. Microwave for about one minute or two or until butter is just melted. Set milk-butter mixture aside to cool.

Peel, core and slice apples into thin slices about 1/8 to 1/4 inch thick. In a large mixing bowl, beat the eggs and sugar with a wire whisk until sugar is dissolved. Whisk in flour, then add in milk-butter mixture and vanilla. Mix thoroughly. Quickly whisk in baking powder. Fold in the sliced apples and cranberry's.

Pour apple mixture into the spring form cake pan placing the cake pan on a cookie sheet on the lowest oven rack for the first 10 minutes. Transfer the cake pan with the cookie sheet to the center rack and bake for 50-55 minutes, or until the cake is cooked through and golden brown. Cool the apple cake on a wire rack, and serve warm or at room temperature. Best eaten fresh. Don't cover leftovers.
