Apple Flip Over Cake Recipe

Directions

Pan size: 9 inch round cake pan or spring form cake pan
Temp: 350°F degrees
Baking time: 40 to 45 minutes
Servings: 8 to 10


This great Apple Flip Over Cake is worth the effort; you'll find yourself asking for seconds.

2 tablespoons butter or butter flavored crisco to grease the spring form cake pan or cake pan
2 tablespoons of sugar
1/2 cup butter or butter flavored crisco
4 large tart apples
1/8 teaspoon lemon juice
1 tablespoon cinnamon plus 1 tablespoon sugar
1 cup sugar
1 cup flour
1/2 teaspoon baking powder
1 egg, slightly beaten
1 1/2 cups chopped walnuts

Preheat oven. Use the 2 tablespoons of butter to grease the side and bottom of the cake pan. Sprinkle the inside of the cake pan with 2 tablespoons of sugar, tapping the sides and bottom of the cake pan to ensure the sugar covers the sides and bottom, may use a little more sugar if necessary.

Melt the remaining butter in a saucepan on medium heat until melted. Set aside.

Peel, core and cut apples to 1/4 inch slices. In a bowl toss the sliced apples, lemon juice, cinnamon and 1 tablespoon sugar together. Place a layer of apple slices in the bottom of the cake pan. Make a second layer with any extra apple slices.

In a large bowl, sift remaining sugar, flour and baking powder together. Whisk in beaten egg and melted butter just until blended, don't over whisk. Fold in walnuts, just until smooth. Pour apple cake batter over apples, smooth out batter.

Place the apple cake on the center rack of the oven, bake for the allotted time or until the cake is golden brown and a tooth pick inserted in the center of the apple cake comes out clean. Remove apple cake from the oven and place pan on a rack to cool about 10 or 12 minutes. When the apple cake is cool enough to handle, remove the outside of the spring form pan or run a knife around the edge of the cake pan, flip the apple cake onto a pretty cake plate.

Serve the Apple Flip Over Cake warm or cold with your favorite topping.
