Pan size: 4 - 4 ounce ramekin dish's |
2 cups cooked long-grain brown rice
butter - flavored cooking spray
1/4 cup sugar
2 ounces, tub-style light cream cheese
1/4 cup 2% milk
1/4 cup evaporated skim milk
1/4 teaspoon vanilla extract
Dash of salt
1 large egg, beaten

Preheat the oven. Spray ramekin dishes with cooking spray. Spoon 1/2 cup rice into each dish.
Combine sugar and cream cheese in a medium bowl; using a mixer on medium speed beat until smooth. Add milks, vanilla, salt and egg; beat well.
Divide the rice pudding mixture evenly among prepared ramekins. Place ramekins in a 9 x 13 baking dish; add hot water to the baking dish to a depth of 1 inch. Bake rice pudding for the allotted or until rice pudding is set.
Remove ramekins from the baking dish. Drizzle each rice pudding cup with apple cider - rhubarb sauce. Serve warm or cold.
This is a 4 ounce ramekin dish.
Apple Cider ~ Rhubarb Sauce Recipe
2/3 cup thinly sliced fresh or frozen rhubarb
3 tablespoons apple cider
1 1/2 tablespoon sugarCombine apple cider, rhubarb and sugar into a small saucepan and bring to a boil. Cover pan, reduce heat and simmer apple cider - rhubarb sauce for 5 minutes, stirring occasionally. Remove apple cider - rhubarb sauce from the heat, set apple cider - rhubarb sauce aside to cool. Serve apple cider - rhubarb sauce over rice pudding warm or cold.
