Apple Glazed Cornish Hens with Roasted Carrots Recipe
| For a great combination of baking apple; use Granny Smith, Braeburn, Jonagold, Empire, Regent, Spartan, Newtown apples or a mixture of your favorite apples together.
Pan size: 2 roasting pans - one medium and 1 small
Temp: 425°F degrees
Roasting time: Cornish Hens - 40 to 50 minutes
Roasting time: Carrots - 25 to 30 minutes

Cornish hens are roasted with Apple Glaze and then served alongside Roasted Carrots.
2 cornish hens - about 2 pounds each
2 cups apple cider
1/2 cup honey
1 cinnamon stick or a 1/4 teaspoon ground cinnamon
1/3 cup maple syrup
salt & pepper
1 - 10 ounce package baby carrots
pinch of salt
3 tablespoons of the apple glaze
Cornish hens roasting directions
In a saucepan, combine the apple cider, honey, maple syrup and the cinnamon stick. Cook over medium-high heat. Bring glaze to a boil and cook until the mixture is reduced by half, about 13 minutes.
Preheat your oven. Line the roasting pan with parchment paper, spray with cooking spray.
Rinse the cornish hens well, pat dry. Place cornish hens in a medium roasting pan, breast sides up. Sprinkle with salt, brush cornish hens generously with the apple glaze and baste again with the apple glaze half way through roasting, then again at the end.
Roast cornish hens until a meat thermometer, inserted into the thickest part of the thigh registers 180°F, about 40 to 50 minutes.
Meanwhile, spray the small roasting pan with non stick spray. Toss the carrots with the salt and 3 tablespoons of the apple glaze. Roast alongside the cornish hens until the carrots are tender and browned, about 25 to 30 minutes.
