Barbecued Pork and Apple Kebabs Recipe

Gas or Charcoal Grill |
Sweet Tomato Glaze Recipe
1/2 cup apricot jam
3 tablespoons cider vinegar
1 tablespoon tomato paste
2 tablespoons molasses
2 tablespoons olive oil, plus more for grill
salt and ground pepper
1 1/2 pounds (about 1 1/2 inches each) pork tenderloin, halved lengthwise and cut into 16 cubes
1 large red onion, cut into 8 wedges
1 large Granny Smith apple, peeled and cut into 8 wedgesTo make the sweet tomato glaze sauce:
In a large bowl, combine jam, vinegar, tomato paste, molasses and 1 tablespoon olive oil. Season with salt and pepper. Set aside.Pre-heat grill to medium.{If using wooden skewers, soak them in water for 20 minutes before assembling}. Assemble 4 long skewers, alternating 4 pork cubes with 2 onion wedges and 2 apple wedges on each (begin with pork and end with apple wedges). Brush pork skewers with the remaining tablespoon of oil. Season with salt and pepper.
Clean and lightly oil barbecue grates. Place skewers on grill; cover grill, cook 6 to 8 minutes, gently turning kebabs occasionally or until grill marks are visible.
Open grill; baste skewers with some sweet tomato glaze sauce, cook, gently turning pork skewers and basting occasionally with more sweet tomato glaze sauce, cook until pork is no longer pink in the center and is nicely glazed, about 4 to 8 minutes longer.
