Apple - Nectarine Salsa Over Barbecued Salmon Recipe

For a great combination of baking apple; use Granny Smith, Braeburn, Jonagold, Empire, Regent, Spartan, Newtown apples or a mixture of your favorite apples together.

Gas or Charcoal Grill
Temp: medium heat
Barbecue salmon grilling time: 10 to 14 minutes
Salmon servings: 4

Apple - Nectarine Salsa is a wonderful new twist for the Barbecued Salmon


Salmon Grilling Directions

4 - 4 to 5 ounce skinless salmons fillets, about 1 inch thick
2/3 cup bottled barbecue sauce - saving 4 tablespoons
salt and pepper
1 lemon sliced into 8 wedges

Apple Nectarine Salsa Directions

2 large apples, cored and chopped
3 fresh - ripe nectarines, pitted and chopped
1 cup fresh blueberries
1/2 cup coarsely chopped toasted pecans
3 tablespoons barbecue sauce
dash of salt

Rinse the salmon; pat dry with a paper towel. Lightly sprinkle salmon with salt and pepper. Brush barbecue sauce on both sides of salmon fillets.

For a charcoal grill, cook salmon on greased grill rack directly over medium coals for 10 to 14 minutes or until salmon flakes when tested with a fork, turning once halfway through grilling.

For a gas grill, preheat the grill. Reduce heat to medium. Place salmon on greased grill rack over medium heat. Close lid and grill as above.

Apple Nectarine Salsa Recipe

In a medium bowl combine chopped apples, fresh blueberries, nectarines, toasted pecans and 3 tablespoons barbecue sauce. Season salsa with a dash of salt.

Serve Apple - Nectarine Salsa over grilled barbecued salmon.
