Curried Turkey Salad in Brioche Recipe

Baking Directions

For a great combination of baking apple; use Granny Smith, Braeburn, Jonagold, Empire, Regent, Spartan, Newtown apples or a mixture of your favorite apples together.

Prep time: 15 minutes
Servings: 4

Here is a great way to use up turkey leftovers. Turkey is mixed with apple and curry powder into a salad than served as stuffed brioche bread sandwiches.

2 1/2 cups cubed cooked turkey
3 tablespoons cored, peeled and finely diced apple
1/2 cup mayonnaise
1/2 cup plain yogurt
2 tablespoons lemon juice
2 teaspoons curry powder
1 teaspoon grated onion
Salt and freshly ground pepper
3 tablespoons chopped green onion
3 tablespoons finely chopped parsley
4 to 8 brioches bread, hollowed, lids reserved (or small hard rolls)
Watercress and cherry tomatoes, for garnish

Preparation:
Combine turkey and apple in medium bowl. Blend together mayonnaise, yogurt, lemon juice, curry powder, onion, salt, and pepper. Add to turkey and stir to blend. Mix in green onion and parsley and stir lightly.

Cover bowl and chill until ready to serve.

Place 1 or 2 brioches on each plate, fill with turkey salad and top with "lid." Garnish with watercress sprigs and cherry tomatoes.

**If you cannot find brioche, use hard rolls. Feel free to substitute chicken for the turkey.**
