Curried Turkey Salad

Directions

For a great combination of baking apple; use Granny Smith, Braeburn, Jonagold, Empire, Regent, Spartan, Newtown apples or a mixture of your favorite apples together.

Bowl size: medium bowl with lid
Temp: chill for 20 minutes or until ready to serve
Prep time: 15 minutes
Servings: 5 - easily doubled

Here's a great way to use up turkey leftovers.

4 cups cubed cooked turkey
1 cup cored, peeled and finely chopped apple
2/3 cup olive oil mayonnaise or lite mayonnaise
2/3 cup plain yogurt
2 tablespoons lemon juice
2 teaspoons curry powder
1/2cup grated sweet onion
Salt and freshly ground pepper
3 tablespoons finely chopped parsley or 1 tablespoon dried parsley
4 to 8 brioches (or small hard rolls), hollowed, lids reserved
Watercress and cherry tomatoes for garnish


Combine turkey and apples in a medium bowl. Blend together olive oil mayonnaise, yogurt, lemon juice, curry powder, sweet onion, salt, and pepper. Add to turkey and apples, toss to blend. Mix in parsley and toss again lightly. Cover bowl and chill for 20 minutes or until ready to serve.

Place 1 or 2 brioches or hard roll on each plate, fill with turkey salad and top with "lid." Garnish with watercress sprigs and cherry tomatoes cut in half.
