Apple - Nectarine Salsa Over Barbecued Salmon Recipe

Directions

For a great combination of baking apple; use Granny Smith, Braeburn, Jonagold, Empire, Regent, Spartan, Newtown apples or a mixture of your favorite apples together.

Gas or Charcoal Grill:
Temp: medium heat
Barbecue time: 8 to 12 minutes
Servings: 4

Apple - Nectarine Salsa Over Barbecued Salmon Recipe

4 - 4 to 5 ounce skinless salmons fillets, about 1 inch thick
2/3 cup bottled barbecue sauce - saving 2 tablespoons
salt and pepper
1 lemon, sliced into 6 or 8 wedges

Salsa Recipe:
3 - ripe nectarines, pitted and chopped
3/4 cup fresh blueberries, frozen is ok
1/4 cup coarsely chopped toasted pecans
2 tablespoons barbecue sauce
dash of salt

Rinse the salmon fillets; pat salmon dry with a paper towel. Lightly sprinkle salmon with salt and pepper. Brush barbecue sauce on both sides of salmon fillets.

For a charcoal grill, cook salmon on greased grill rack directly over medium um coals for 8 to 12 minutes or until salmon flakes when tested with a fork, turning once halfway through grilling.

For a gas grill, preheat grill. Reduce heat to medium. Place salmon on greased grill rack over medium heat. Close Cover and grill as above.

In a medium bowl combine nectarines, blueberries, pecans, and the 2 tablespoons barbecue sauce. Season with a dash of salt.

Serve Apple - Nectarine Salsa over barbecued salmon.
