Apricot - Cherry Salsa Recipe

Directions

For a great combination of baking apple; use Granny Smith, Braeburn, Jonagold, Empire, Regent, Spartan, Newtown apples or a mixture of your favorite apples together.

Apricot and Cherry Salsa is excellent served with grilled meats or fish.

2 cups pitted and diced fresh apricots
2 cups pitted cherries, cut in half
1/2 cup thinly sliced green onion
1 tablespoon finely shredded, fresh basil
1/2 tablespoon chopped, fresh thyme
2 teaspoons finely chopped jalapeno pepper (fresh or canned)
1 clove garlic, chopped finely
2 tablespoons fresh orange juice
2 tablespoons fresh lime juice
1 tablespoon honey
1/2 teaspoon salt

Combine apricots, cherries, green onions, basil, thyme and jalapeno peppers; reserve. Whisk together orange juice, lime juice, honey and salt; fold into reserved fruit mixture. Chill several hours to combine flavors. Serve at room temperature.

Apricot and Cherry Salsa is excellent served with grilled meats or fish.
