Roasted Red Onion Mayonnaise Recipe
1 medium red onion, chopped
2 teaspoons olive oil
Salt and pepper
1 1/2 cups mayonnaisePreheat oven to 350 degrees F.
On a small cookie sheet, toss the red onion, olive oil, salt and pepper together. Roast in the oven for 20 to 25 minutes until the onion is very soft, stirring occasionally.
Remove red onions from the oven and let cool. Transfer red onions to a food processor and buzz until finely chopped. Add the mayonnaise and pulse until smooth and combined.
